A Taste of Kastinoy at Hermanos Tapas Bar

Feel the mood of the 1800s matched with a low-key lighting and sense the Filipino atmosphere with Spanish influence. This is how the tapas de Kastinoy dishes of Hermanos deli bar would taste like.
Tapas can generally refer to a wide variety of appetizers of the Spanish cuisine. But Hermano‘s tapas de Kastinoy is basically a term given to uniquely Filipino dishes with a Spanish twist. They are best partnered with red wine as well.
Three of Hermano’s bestsellers according to the waiter from whom Sago ordered from are:
Tapang Usa de Katipunan [P250]. A smoked deer with pickled radish and wine vinegar.

Longganiza De La Revolucion [P280]. This is marinated Vigan longganiza served with chili tomato.

Calamari del Gobernadorcillo [P250]. These are dried calamari flakes served with chili paprica.

Of the three, Sago liked Longganiza De La Revolucion with its tender meat and authentic Vigan longganiza taste.

Sago also gives Bola-Bola Paella Dela Guerra ]P150] (not in the best seller list) gets the thumbs up. They are deep fried breaded paella rice balls served with chili tomato sauce. The crispy-on-the-outside, chewy-on-the-inside balls were new to Sago’s taste buds. Although it was made better by the chili tomato sauce, Sago went easy on the chili.
Two dishes which looked sumptious were Pollo del Apolinario [P200](Marinated chicken fillet in lemon grass paprika) and Gambas dela Islas [P290](Shrimps sauteed in garlci, chili and olive oil). I hoped I tried it but I guess Sago would have to wait for the next visit. 🙂
