Kaya’s Talangkanin – a Korean Bibimbap & Filipino Aligue Fusion

Talangkanin was formed from the Tagalog play of words ‘talangka’ (small crab) and ‘kanin’ (rice). It can also be called Aligue Bibmbap which is based from one of Korea’s staple dishes Bibimbap (mixed rice).

Kaya Restaurant incorporated a Filipino twist to it by adding ‘aligue‘ (crab fat) to suit the local taste.

The Aligue Bibimbap is a mixture of rice with aligue, squid rings, shrimps, egg (sunny-side-up), togue (bean sprouts), spinach, and sesame seeds. It is served mildly spicy but you could request it to be customized.

The shrimp, squid and aligue rice are cooked separately and only combined in the bowl.

The dish Talangkanin was actually brought about as a secret recipe of Jillian (Angle Locsin) of ‘Only You‘ – a local TV light drama show. The signature dish was intentionally developed for the remake of the said koreanovela.

Verdict – a good seafood mix of shrimp, squid rings, and aligue rice. Matched with egg and spinach, it’s a little heavier than your usual lunch. It should be, since it’s also a little heavier in the pocket. 🙂

And of course, the togue (bean sprout) which can’t be missed in most korean dishes; and the crispiness provided by the same and the sesame seeds.

On another note, Kaya still has their traditional serving of the Korean-style Bibimbap (inset photo above) if you’d like to try them both and taste the difference. 🙂
